Heat oil in a pan. Add cumin seeds to it.

Then add finely cut onion. ...

Add turmeric powder, red chilli powder and salt.

Then add capsicum and let it cook for 10 mins on a simmer with a lid.

Now add the eggs and cook it till bhurji is done.

Garnish with coriander or parsley leaves.
